RECIPE : autumn mushrooms with garlic and parsley
Ingredients (4 people)
• 500 g fresh mushrooms
• 2 cloves of garlic
• 1 bunch of fresh prasley
• 30 g of butter
• 2 tablespoons of olive oil
• Salt and pepper, to taste
Preparation
• Prepare the mushrooms: Start by cleaning the mushrooms with a brush or a clean cloth to remove dirt. Avoid washing them with lots of water so they don't become waterlogged, which would affect their texture.
• Mince the garlic and parsley: Finely chop the garlic cloves. Wash and chop the parsley.
• Cook the mushrooms: In a large pan, heat the olive oil and butter over medium heat. Add the mushrooms in a single layer (if possible, to prevent them from releasing their water). Let them brown without stirring for 2 to 3 minutes, then gently turn them over. Continue cooking until they are well browned and slightly crispy.
• Add garlic and parsley: When the mushrooms are well browned, add the minced garlic and cook for 1 to 2 more minutes, stirring. Then add the chopped parsley, salt, pepper, and mix gently.

Add a drizzle of hazelnut or truffle oil just before serving and enjoy a gourmet and seasonal dish!
